Bright green-gold; cordon cut is a tried and true method, resulting in very concentrated lime flavours and good acidity.
There’s all of the usual Clare citrus-like fruit with added richness. It has a wild honey-like sweetness but still a lovely backbone of fresh acidity to hold things together so it’s sweet without being overly cloying. It’s a bit like tasting essence of Riesling. For a rich sugary dessert, it’s just the thing particularly if it’s got a good dose of cream, even better as it will have a little extra “cut”.
