The Cabernet comes from a single block in the Willunga district at the southern end of the McLaren Vale. The grapes are grown on black Biscay clay and were hand harvested in March at around 13 Baumé and laid out to dry on 10 kg drying racks.
Unprecedented seasonal conditions reduced yields to a 30 year low. The 2007 harvest commenced six weeks early. The major seasonal influence on the 2007 crop was the severe drought conditions experienced across much of the country however an episode of rain in mid January improved the situation for many growers. Berries were small, of high quality with intense flavour and colour.
The grapes were left to dry on the 10kg drying racks for 7 weeks and 3 days in the traditional Amarone manner, resulting in a 30% bunch weight loss. The wine was fermented on the skins for two weeks and then left to macerate for a further 3 weeks prior to pressing. This wine saw 10 months in 80% new French oak and 20% American oak.
Dark and ruby red in colour, with rustic traditional earth and cedary spices on the nose, Christmas pudding characters and a hint of coffee bean. The mid-palate is complex with rich, savoury tannins. The seamless integration of oak, tannin and fruit makes this wine approachable even in youth.
