The Cabernet comes from a single block in the Willunga district at the southern end of the McLaren Vale. The grapes are grown on black Biscay clay and were hand harvested in March at around 13 Baume and laid out to dry on 10kg drying racks.

Vintage Information

Vintage started the first week of February, slightly earlier than average, with high natural acidity due to the cool early summer and healthy canopies. The heatwave interrruped perfect vintage conditions, causing a condensed harvest period.


The grapes were dried on 10kg racks for 37 days in the traditional Amarone manner, resulting in 30% weight loss. Grapes were fermented on the skins for two weeks, then left to macerate for a further three weeks prior to pressing. This wine saw 10 months in 80% new French and 20% French coopered American oak.

Tasting Notes

A diverse aromatic spectrum: black plums, leather, herbs and spice. The tannin structure is seemless and tight. Flavours of anise, blackcurrant and roasted coffee bean.
