The Cabernet comes from a single block in the Willunga district at the southern end of the McLaren Vale. The grapes are grown on black Biscay clay and were hand harvested in March at around 13 Baumé and laid out to dry on 10 kilo drying racks. Yields are around 35 hectolitres per hectare.
McLaren Vale experienced a mild growing season with ideal conditions for budburst and flowering. Most inland regions had a reduction in fruit set due to a burst of heat in November, however in McLaren Vale, due to its proximity to the ocean, the effects were nullified. Good early season rainfall contributed to the already rejuvenated water table and the fruit ripened evenly without any heat stress. Cool nights and mild days allowed good acid maintenance, keeping the fruit bright and flavoursome but above all, balanced. The grapes were harvested in March.
The grapes were left to dry on the 10 kilo drying racks for five weeks and three days in the traditional Amarone manner, resulting in a 30% bunch weight loss. The wine was fermented on the skins for two weeks and then left to macerate for a further three weeks prior to pressing. This wine saw 10 months in 80% new French oak and 20% French coopered American oak.
Dark fruits with wisps of smoke and crushed leaves combine with notes of espresso and dark chocolate. The palate has intensity derived from the drying process, the tannin structure is seamless and shows almost infinite length.
