The Cabernet comes from a single block in the Willunga district at the southern end of the McLaren Vale. The grapes are grown on black Biscay clay and were hand harvested in March at around 13 Baumé and laid out to dry on 10 kilo drying racks. Yields are around 35 hectolitres per hectare.

Vintage Information

The 2012 vintage was a great one for us in McLarenVale, producing deeply flavoured Shiraz wines with great energy. Fruit for our Serpico comes from the Lopresti vineyard, and more specifically the Chinese Block, which is located at the southern end of McLaren Vale about 3km east of the coastal town of Port Willunga. The Cabernet in this vineyard is planted on black Biscay clay which along with the ideal Mediterranean climate produces wines of concentrated varietal character.


The grapes were left to dry on the 10 kilo drying racks for five weeks and three days in the traditional Amarone manner, resulting in a 30% bunch weight loss. The wine was fermented on the skins for two weeks and then left to macerate for a further three weeks prior to pressing. This wine saw 10 months in 80% new French oak and 20% French coopered American oak.

Tasting Notes

On the nose this wine has aromas of plums, blackberries, savoury herbals, and a dusting of white pepper spice. On the palate the dark fruit characteristics prevail of blackcurrant, Christmas cake and dark mocha chocolate. Multi layered and completely mouthcoating with elegant, fine grained tannins and a velvety finish.
