Honami Matsumoto from House of Sake speaks to us about Keigetsu by Tosa Brewing Company, situated in the Kochi Prefecture on Japan’s Shikoku Island...

 

 

"I would like to talk a little bit about the region that Keigetsu is from. It is really lovely, beautiful countryside, in the middle of Shikoku Island at the base of the mountains. We grow our rice organically, and we grow high-quality table rice called Hinohikari and also Sake rice called Gin no Yume which is locally produced in Kochi prefecture on a terrace rice paddy. Keigetsu also produces a Yuzu sake.  We produce more than 50% of the total Yuzu production from the Kochi prefecture in Japan. This area is particularly famous for the highest quality Yuzu production in all of Japan.  Our relatives started to produce Yuzu organically, and we pick the Yuzu at 70% of ripeness, by hand, and we actually hand squeeze beautiful fresh Yuzu juice without extracting any oil or putting any of the skin into production."
